Choose food that waits
Braises, stews, traybakes, and anything that improves after sitting will let you talk to your guests. Steak for eight will not.
Ambition should go into one element, not the whole menu.
Do the work early
Set the table in the morning, chill drinks, chop what can be chopped, and pick a dessert you buy or made yesterday. On the night, all that should remain is heating and plating.
Write the sequence down. It stops the last-hour panic entirely.
Nobody remembers the food
Guests remember whether the host seemed happy. Low lighting, decent music, a drink in hand at the door, and a relaxed cook cover most sins in the kitchen.
Serve family-style from the middle of the table and let everyone help. It always feels warmer than plated courses.
